    Smoking 2 9lb pork shoulders

Well I woke up later than I wanted and had to help my daughter back to sleep and fell asleep in there too lol. Wanted to start at 5:30am got it in at 7:30am pulled it off at 5:30pm @205. Had about 2 cups of juice to add back in along with SoFlaQuers sauce. Made a homemade bbq sauce since we...

    Smoking 2 9lb pork shoulders

Makes sense for the timing. For my fire I usually do one full chimney of charcoal and then throw a split on top of it and then add one when temps start to drop. I open the FB lid to not have the heavy smoke go in when a new split goes in. My first shoulder was 10 hours and it fluctuated between...

    Smoking 2 9lb pork shoulders

Ill be around 275-300 on the hot side. Cold side is 33° cooler. Ive been working on smoking with the firebox door open so its a nice clean fire. Testing temp control with just the smoke stack damper.

    Smoking 2 9lb pork shoulders

Hey guys, This is the largest smoke by weight I have tried yet. I bought 2 equal weight shoulders from fry's (Kroger) 9lbs each. Figured equal weight would be best. The 1st shoulder i did was 8lbs and went 10 hours to 205°. They are already injected and are covered with mustard and rub...

    Spare ribs with orange wood

Nice thing about light woods is the use as fuel and smoke. I may try mesquite in moderation since I can get it for free all day long. On pork the orange just tasted like apple for the most part. If for sure colors the meat a lot more

    Spare ribs with orange wood

So I decided to buy some orange wood logs this time around. Apple logs are hard to come by here. Its either mesquite, mesquite, mesquite or oak, orange, pecan that is readily available here. Tried a few new things this time and this is the first rack ive done since I got the smoker I fixed up...

Oh man these river country thermometers are miles better than the dozyant knock offs! So worth 18$ vs 8$! Got one installed tonight will do the other tomorrow. They are solid and heavy, no fog after 5 mins of boiling water.

First smoke in my newly restored smoker!

So it held temps pretty well. About 6 hours in I was struggling to get the hot side above 250. No clue what the cold side was at since I had to order 2 new thermometers because the ones I bought were hazy. It would fluctuate between 225 and 300 on the hot side. One change I will make is using...

First smoke in my newly restored smoker!

It was good. Will also be lunch today. It was SoFlaQuers sauce. The ACV was too prominent for me I only used half the mix. Did make it nice and juicy.

First smoke in my newly restored smoker!

Had this butt in for 10 hours. Was my first smoke since I finished the restore on an old origional oklahoma joes smoker little 16x30 chamber. Gonna defenately get logs for my next smoke. Also threw in some chicken breasts for lunch. Gonna try that stickied finishing sauce with it. Sitting in...

Ya I'm sure the hinges can be tweaked to lower the bottom edge more. They are just miss aligned but I dont have a torch to heat and bend or a welder to cut and weld new hinges. Ill probably end up clamping but just think they are ugly. I will certainly be modding the inlet on the fire box door...

Thats what I bought last night. 2 of the river country 3" with 1/4" NTP. Got my lavalock gasket on still not to happy. Still have leaks because the doors are warped. Didn't want to have to clamp my lids but looks like ill have to. Also looked into the firebox leaks and saw the Yoder Wichita...

Well I got one of my thermometers sin today. The Dozyant 2" and frankly it sucks. Said NO fog lense. Just from calibration it fogged. Its been 4 hours still foggy. Going to return it. Should I go with lavalock or River Country?

So inside is surface rusted I'm gonna season it now. With fresh paint should I still spray the outside with cooking spray? Charcoal in the chimney now warming up. My seals and such wont be here till Monday :(

Mine doesn't have any side shelves just a removeable handle on the left. Nice idea for extra space though.

While I wait for my spring handles, lavalock gasket and thermometers to finish the build would it hurt to cover the inside with bacon grease? Ive noticed surface rust inside from the humidity and don't want to keep cleaning it off. Wasn't going to season it until I jad all my parts.

Thanks for the comments guys. Yes its had some neglect and poor attampts at upgrades. In one of the pics a mason jar/lid can be seen tack welded to the bottom with a torch hole blown in it to drain grease. A few other exterior "holes" not all the way through just blemishes. Not sure do I plug...

Not a huge can of the finish of the roll on paint vs the aerosol but it does coat much heavier so should protect better. Here is 1 coat so far.
