I thought they tasted great so did the family. They seemed a lil overdone on the outside to me also but we're super juicy and tender so all in all I was happy.
The rub I make is as follows
3tbs medium ground pink salt
2 tbs black pepper
2 tbs garlic powder
3 tbs paperika
2 tbs onion powder
1tbs ancho chilled powder
1 tbs dry yellow mustard
1/2 cup brown sugar
I used mustard as a sticking agent.
