Started with a overnight brine, (Water, Salt, Sugar, and Lemons), dry the little bird put back in the fridge for the skin to really dry up. Next basic rub, salt, pepper, onion and garlic powder, paprika, chilli powder...

I bought the STL’s once’s but it didn’t came out good. So I watched Aaron Franklin video on pork ribs and he used whole ribs, so I went to my local grocery store and they had the whole ribs on sale. Bought two of them and follow Aaron receipt to the teeth. And boy they came out...
Since the weather is finally nice and gathers is been easing up this I did some pork ribs.
Also I’m really excited because I finally learn to manage a clean smoke thru out the cooking

Today I did a little experiment with Salmon.
I did a combination of grill/smoked salmon.
First I soak two cedar planks on apple juice for 3 hours, then I seasoned the salmon with a Brazilian rub (salt and garlic) with rosemary branches between the portions and slice lemon...

This weekend we decided to make Brisket and Ribs for my brother and sister Birthday and to celebrate Father’s Day.... I did made some changes on the rub and it came really good.

I’m finally getting my new Yoder offset smoker on Friday and I have a couple bags of hickory logs that I bought at Home Depot.
Does anyone in NJ area knows where I can buy wood logs or a website ?
I prefer oak but at this point I’ll take anything. I tried google it but no luck.
