and about the giblet package, my girlfriend, for some strange reason, really wanted to try and pull it out herself and stuff. so i let her, i just kicked back and made the brine while she took out all the nasty stuff.
well i just put the turkey in the brine, (im practicing for thanksgiving)
of course there is something wrong, i read somewhere that turkeys, while smoking, should be between 10-12 pounds. well my mom, (that makes me feel pretty juvenile :roll: ) bought a 15 pounder, but i said 10-12... moms...
Lawman, im not sure if anyone answered this question, but im pretty sure the answer is the smaller the pepper the hotter it is. I think thats the case, i know it is for garlic, (the smaller the more garlicky taste)

they were in there for about 15 hours. the temp read 195 and i went to grab the bone and it came out soo easily and they came out real good. my boss gave me 70 bucks cause he liked it so much and the other lady gave me 100 bucks and wants me to try to smoke her some...

took me 3 hours, but im not very good at that kind of stuff. i didnt take pictures, i was way to lazy. the finished project looks good, and i cant wait to fire her up. im seasoning her tomorrow, and then cooking up some ribs on wednesday. seems easy enough, the 3-2-1 method.
