Thanks all. I’m gonna toss ‘em. I checked the thermo pro it’s ok. It shows 7 degrees low in boiling water and right on in ice water. Checking the MES this morning. I’ll let you know.

My leg quarters took 8 hours to hit 170?!?

Very strange goings on! I have not been on the forum in a very long time and this happened today so I thought I’d see if anyone might have an answer. I started some chicken leg quarters at about 3:30 with the hope of them being done at about 6:30. I had a ThermoPro digital thermometer in the...

Help Please I think I screwed up!

Hello All. I haven’t been here in a long time but I need to ask a question? I’ve been smoking a precooked spiral sliced ham for a couple of hours on my Masterbuilt electric smoker and just checked and I forgot convert the recipe from Celsius to Fahrenheit and it’s been on at 135 for about 2...

I'm looking for something I can smoke with blueberries or raspberries

Found a marinade/sauce at Costco several years ago. Blueberry Chipolte. Grilled thick pork chops and basted them. I have been thinking about pork tenderloins and making my own marinade.

    Friday Night Pork Tenderloins

First time on Pork tenderloins in the MES 30 with the mailbox mod. They look a lot pinker than the were.Cell phone pic. Got them to 145°, checked with my thermopro instant read. Jerky temp and time for smoker

Hello all. I've been reading these threads and I'm still a bit confused. I want to make my first batch of jerky in the smoker. I've done jerky in a dehydrator many many times. Mostly using a soy sauce base or Claude's marinade. Please forgive the redundancy but I want to get this correct. Step...
