    I use my foodsaver vac n seal with accessory attatchment for pint or qrt mason jars n seal them and store in fridge forever. heck theres nuff vinegar. the sauce i make simmers long time.

    you can cook ur fecal rinsed chicken any way ya want. i will put my pcs in a bowl of cold water n trim excess skin n fat, or get crap out of ribs ect.. let it sit{dont have to dry} and season or inject or brine the way i want. not knocking ur way, just not for me.. i ve been sanitary for 65 yrs...

    hold on.. those arn't germ army's... heck my Genisus is only cleaned twice a yr. it gets preheated to 550 every time i use it.. a guy needs those good bacteria. drop a pc of meat rinse it and put e'r on.

    i think you could add some hard beef fat or pork back fat..and use some NFDM to retain some moisture maybe.

    3rd eye , you mention chickens in a cage for 42 days.. for me to mushy.. we raise chickens n couple geese usually but not this yr as the great horned owls hauled away 13 last yr.. we raised heritige breeds n some meaters .. to keep the meaters healthy we have like a 100' x 75' fenced and coop...

    propane is fine. if ya want a smaller one. just dont buy one of those 10-12 thousand btu's. get a 20 thousand btu. my old weber Genisus gets 550 degrees easy. when i want smoke i just throw some chunks on the burners

    check ur local sams website for case sales of pork n beef. or costco , they dont put them out in the coolers but you get cyrovaced fresh stuff at a discount.. it's what they cut up for the show cooler's.
