I was volunteered to to smoke the meat for the company thanksgiving pot luck.Thanks to all the input I have read on this forum over the last year it was a huge success.Turkey spent a day in a brine and smoked at 230 for about 9 hours the butt took about 12 hours and melt in your mouth.

So thanks to Gary S and Chief Willie I decided to try these since I live in KY and they are hard to find here. I followed the recipe and they turned out great. Sorry I didn't get a lot of Q view but it's hard to do while stuffing sausage. Thanks guys.

Pork loin out of the fridge a little more rub then on to the smoker.
After 4 hours @230* pulled at it of 145*
Apple wood smoked pork loin with baked beans and corn on the cob. Very tender and juicy.

I have been smoking meat for a very long time but I have never made link type sausage such as hot links. I have all my equipment standing by and several recipes from this site just need help choosing a good quality hog casing. I have been looking at amazon as I do have a prime account.

I hear a lot Ofcomplaints about the stock temp probe being way off on the MES. I have done several trials on my MES 40 and hear are the results against my Maverick.Pretty darn close. Must have got a good one from Sportsmans warehouse.See bottom temp.Left is Maverick right is temp probe on MES 40
