    Dumb mistake with Boston butt

    picked up 2 Boston butts at Kroger for .99 lb, forgot them in the truck. Outside temp about 63° and it was in truck for 3.5 hrs. Best bet to toss them?

    First attempt at smoked chili

    Beautiful fall Friday here in NW Georgia. I figure let’s fire up the smoker and try something new. I put the meat and my veggies on the smoker first. When they were done I assembled everything and put it back on the smoker, going to let it ride for 1-2 hours and see what I get lol.

    36 chicken legs

    Smoked up 36 chicken legs today for an event at my church this evening. I rubbed them in mayo and lightly dusted them with a rub. I used B&B oak lump for the first time today with some apple chunks, I really liked the way the skin smoked up with the mayo. They were a big hit.

    My first brisket

    First time ribs

    Smoked 3 racks of St. Louis style ribs today on my Oklahoma Joe Highland for the first time. I ran my smoker between 250-275 and used oak/cherry combo. I did 3 hours on grate, 1 1/2 hrs in foil and finished with sauce for about 30. The times seemed fast but they seem to come out great.
