    Sweet and Spicy snack stix

Hello everyone. I'm looking to make something different out of my next batch of snack sticks. I wanted to go more sweet and spicy with them, but I can't seem to find a suitable recipe. I don't want to add maple syrup to the ingredient list. I was thinking these ingredients to start.  .25 % Cure...

    Spicy Salami and Pfefferbeißer salami

I put together 1 kilo logs of a spicy salami and Pfefferbeißer style salami on Sunday morning. FL-C was used for fermenting with 3% dextrose for each. Currently hanging @ 70-72 F and wrapped in moist paper towels to ensure no case hardening while they're fermenting. They'll be put into the...

**Help** Need General Contractor - Austin, Tx

I'm turning to the SMF community because I know no better one. A good friend of mine that lives in Austin, Tx is having trouble with his contractor. It's the all too often heard story of pay half the price of the job once contracts signed, contractor comes and gives a quote, does 1 days worth of...

AMNPS - Using Todd's dust while hot smoking

Yesterday was an ugly day over here in SW Chicago. The morning started out chilly and sunny. I loaded a 4 lbs chuckie into the MES30 around 8am. I had a couple issue during the smoke, but that's not the purpose of this post. A few weeks ago I told Bear I would use the dust on my next hot smoke...

    Peanut Butter Porter - delicious!

So I'm just getting back into brewing. I was brewing for about 2 years very often and then it sort of stopped due to me starting to make sausage and what not. Now, I'm figuring out ways to get both done. I thought I'd share the one that was brewed 2 Sundays ago and will be kegged on Friday. It's...

    Some Andouille and Kabanosy

Made 5 lbs of Len Poli's Kabanosy on Saturday and I've got 5 lbs of Andouille stuffed and chilling in the fridge to be smoked tonight. I used 19mm collagen casings for the Kabanosy and smoked and finished in about 5 hours. I had to rush them a bit but still managed no fat out. The casings I...

    What should I cure next?

I am sort of a loss. A week ago, I had 5 or 6 hunks of meat in my fridge curing. Now I have none and it just feels wrong. Currently I've got 2 Coppa, 1 Pancetta, 10 lbs of salami (2 recipes), and 1 Lonzino drying.  Does anyone have any suggestions?

    Another 1st Brisket Thread

Well, I've decided to try my hand at a brisket. I picked up a 12 lb full packer on lunch from Costco for $4.19 a lb! My plan is to rub with salt, pepper, garlic powder, and onion powder. I'm going to have to separate the flat and point because it's too long to fit into my MES30. If anyone has a...

How long does re-thawed already cooked food last?

So my wife and I make a good amount of freezer meals for ourselves. There's something I'd like to confirm regarding the thawing of already cooked food in the fridge and how long it's good for. As an example, let's say I cook a freezer meal on Monday and it's ready that day. That same day, I...

    Andouille (UMAI)

    Coppa (UMAI)

Well since the .99 cent per lb buy at Jewel, I thought I'd give butchering the Coppa portion out of the butt and getting one going. I'm really not sure if I did it right. I watched the tutorials and all the videos, but of course my butt don't look like that other guys butt..... All in all, I...

Sausage Recipe Builder - Android/iPhone App

So why isn't there one of these yet? The homemade sausage craft has begun to take hold I feel and it's about time that one gets put together. I'm also a homebrewer and I've got Beersmith at my finger tips on my phone. I can add ingredients and take notes and do everything I need on there. It's...

    Pancetta (UMAI)

So I started my Pancetta on Saturday. I used the recipe from the UMAI site minus the juniper berries (I never have these at home). When using the recipe, I broke out all of the ingredients into percentages used and I use that method of figuring how much of each spice to use. I find it much...

    Dry cure large cuts

I've 8 lbs of belly at home. A portion I'm going to be making into pancetta, but I'll also be making 3 or so lbs of bacon. The larger portion is going to be way to big for any ziplock I've got so I was thinking I could wrap it nice and tight and snug in plastic wrap after it seasoned and just...

    Dried Albanian Beef???

So another thing that my co-worker has wanted me to give a shot. He told me a story from when he was younger living in Albania that he remember his grandmother smoking out in the smokehouse for days. They'd cure thick strips of beef and then smoke them for days over hickory and some heat. His...
