    I'm going smoke a cross rib roast on my wsm. I was looking for a little direction on time. Its a 5 pound roast. I was planning on taking it to 140IT. Should I be expecting 1hr per pound? I am also going to use Chef JJs au jus recipe as it seems to be a hit on here.

    Hi everyone Just joined today after placing my order for a Weber Smokey Mountain. I've done a little smoking on my gas grill but this will be my first attempt with the charcoal. I'm looking forward to lots of tips and recipes for the smoking veterans.
