    Snak the rack!

    My MES40 always seems to have a couple empty racks when smoking. So I took one of my favorite snaks and made it smokey better. Fill empty racks with fried porkrinds,place above meat your smoking. The porkrinds soak up the smokey flavors comming up from the meats. Bag em up for a tastee treat!

    Bacon weave turkey breast,and Easter ham

    5 pound bone in turkeybreasr,brined in hawain punch,sea salt overnite. Injected some ground clove and allspice in, used some hot rub and covered with bacon.Smoked 5hr with Apple dust.     AMNS 6-8 hrs of smoke?

    I have digital MES 30,with amns in water pan,both outside rows filled and packed in. I light both ends,works great but I get about 3hrs smoke,with the vent all the way open. Will chocking the vent closed help? I have been just refilling 2 rows and finishing.

    Sugarfree Sauces,Marinades

    Anyone have a good sugarfree bbq sauce,using splenda or liquid sweetner? Im on Atkins diet,( down 110 lbs) and picked up a MES 30 to smoke,cook meat in another way. Have not even used it yet,but excited about it!
