    What can I do with these thin beef ribs?

    When the stores put prime rib on sale I stock up. The stores trim the ribs thin and tie them back onto the roast. What can I do with these? They look too thin to smoke and eat like this. Do I thaw and cut the meat off for beans or grind for burgers?

    I have a London broil that is vac packed and is frozen (was bought unfrozen). Would it be OK for me to defrost, throw a couple hours of smoke on it maybe to 110 deg. Then vac pack and refreeze for a later cook to usable temps? or maybe smoke frozen to a lower temp.
