smoke in process. i did 5 fattie's , what i did was inject them with maple syrup, brown sugar mixture, while they where still in the plastic wrap I used the plastic wrap to hold the mixture, will have pic's if i can down load them
on the top of my GOSM there is a vent adjustment that you can turn to increase or decrease draft, it has a stop on it so you can not complety shut it off, I was wondering if you could remove the stop so you could turn it off, like shutting it off to keep all in smoke in ?????

i have some small deer roasts, can I use the buckboard bacon cure on them and cure them according to there instructions, it sure makes great bacon using pork, wonder how it will be with deer.

rec. a wild turkey from a friend, want to smoke it in the gas smoker, do you have to brine it, can you inject it like when you deep fat fry one?

Just purchased a box style gas smoker, seems hard to keep the temp down, Would like some tips on smoking a ham, brisket. and deer meat. Can you smoke fish?
