well after drooling over all the great looking pork butts done lately I finally decided to smoke one myself (the wife doesn't like pork so I stick to briskets normally).
Went to Sam's club and picked up a nice two pack (17 lbs)
injected with a combo of Dale's seasoning and garlic blended...
well I woke up Easter morning with smoke on the brain !
fixed up a fatty for breakfast
smoked with hickory for about 2 hours
also had an 8 lb mash shank half ham on the smoker too
8 hrs in the hickory smoke then foiled for an hour topped off with my homeade raspberry chipolte sauce...
Wondering if anyone knows if Chinaberry trees produce good smoke or bad? ? ? hoping it is good cause I got access to all I can cut for years ! ! !

last Sunday I decided to do a rack of spare ribs for dinner. fired up the ecb and threw the rack of st louis style on the bottom. threw the spare meat ( that skirt you trim off the top ) on the top. about an hour and a half later I was serving sum smoked pork fajitas for lunch ...........sry...
well this weekend I pulled a brisket outta the freezer. My father-in-law was in town and figured it was this or hamburger helper lol and we know HH just aint gonna cut it! !
I think I cut it pretty good between the point and flat
seasoned it up with a basic brisket rub
paprika garlic...
