The filet mignon was only smoked for about an hour. I didn't want to smoke it too far. The smoke was very light which is perfect for filet mignon. As you can see, the dinner turned out AMAZING!!! Filet Mignon, Lyonnaise Potatoes and Green Beans.
Next time, I think I'll smoke the potatoes, too...
Smoked the potatoes (2 hours only) and stew meat with mesquite for about 3.5 hours. Then, added the cubed potatoes and stew meat to the slow cooker for another few hours. I would have made the cornbread on the smoker too, but there was no more room. Best beef stew I've every made! I never knew...

Hickory smoked BBQ pork butt I had yesterday. Smoked from 8:30AM and pulled off at 1:00PM at 175 degrees internal temp. Temps were around 270-330 degrees while smoking. Added the homemade BBQ sauce at the last 10 degrees.
