Nice build! I dont think those pics do justice for the footprint of that smoker. I read the specs then looked at the pics, pics make it look smaller I think.

Interesting thread. For me I have read a little bit about salt pork just out of interest. As far as I got in understanding they just packed it in salt and called it a day until they wanted to eat it. Shows what I know.

Looks great! Had a family reunion this past weekend. BIL made 24 qt of pickles from the garden.
Then a bunch of zuchinni to grind for relish. Got to taste some jerky, so tasty and tender not too dried out. He will survive that is for sure.
