Great lookin meal!
Yeah that kind of rice is amazing. What I find wild about it is that it is not hard to make well, it is just difficult to NAIL that perfect amount of tasting. 10 seconds too much or too little and boom the perfect rice is gone but amazing rice still to be had.
As for...
Ah, if you can get real mesquite then no need to buy the pellets. Though the 100% mesquite pellets in the MES burn perfectly for Thin Blue Smoke and I do 12 hours of them on my brisket and NEVER have anything over smoked. It's all due to that clean smoke :D
The foam spray insulation is not really rated to be working continuously over 300-325F from what I found in the past BUT, I run 325F for NO MORE than 4 hours when I do chicken or turkey smokes so I can get edible skin.
That is the only time I run over 275F and again I never run it at 325F for...
That's exactly what I would have done. High temp food safe RTV silicon to seal and foil flue tape!
When I have to replace any foam insulation I have removed, I replaced with high temp fiberglass fire place insulation that I just lay and push into place. It will not burn up or melt down in any...
If you pass by a Market Street while on your trip, the "Texas Mesquite Grilling Pellets" are 100% mesquite wood pellets:
In my opinion, beef smoked with Mesquite simply cannot be beat :D
Yeah it's no issue since you've completed the rewire for it to work with a PID. You are correct the wire would be a tiny one going to the controller or slightly bigger one going to the bulb. None of that is wired up after the rewire was performed. Power is now going from the MES cord to the...
Thanks! They aren't bad. Just ate on some I heated up in the microwave. They are acceptable but not the amazingness they could have been.
They are more of the texture of a hamburger patty than a juicy sausage but still have all the flavor and some burger level juiciness to them.
They will...
Often we see posts about nice successful smokes and good/great outcomes but this one is a post about some failure hahaha.
This past week I made 40 pounds of my TX hotlink sausage in cellulose casings for skinless sausages.
Everything went perfectly until I put them in the smoker.
I had the...
Hi there and welcome!
If keeping it whole there is also this very wise approach to trimming the brisket which involves removing the thin portion of the Flat muscle and repurposing it because leaving it on the brisket will just burn it up and you will have to throw it out anyhow:
That green...
Hi there and welcome!
I'm with @normanaj on the change of spices.
If you plan to do rice and beans you can go spanish rice and pinto beans and then fajita season and grill your chicken thighs.
Salt, Pepper, Onion, Garlic, Chili Powder, and a pinch of ground Cumin. Boom you have chicken...
Hi there and welcome!
I feel like Memorial day is a good day. However, as @JckDanls 07 stated, you can get your MES up and running easily. It is likely that the connectors at the heating element corroded away or the connectors at the safety limit switch (or the switch it self) corroded and...
Hi there and welcome!
I get them at any run of the mill grocery store that has them for the best price. I'm fortunate to be in a big city with lots of options. I wouldn't worry about going to a butcher. Get what you can at the best price and cook them up.
If you do Food Lion and Walmart...
Like the other guys are saying, I believe you can remove your mailbox mod and be good to go. I feel like a good compact design might even allow you to just slide it under the legs there. If it sets on top of something it should be free of direct rain and any running water that goes under your...
Day 2 report - well the left over 8oz or so froze quite solid over night. It will need a little defrosting time and the wait is killing me. So if not eating it all in 1 go then it seems it will need some defrost time when coming back to it. Just wanted to put the info out there in case people...
Hahhaha yeah! If I were to solder everything, wow would it last forever. I mean my element COULD be replaced since I know the insulation on it is likely the reason it trips GFCI breakers but it operates with no other issue and I have a non GFCI plug I plug it into so I'm just waiting for a big...
Lol it was so long ago now aye, and thanks!
The whole reason I started this thread was to help because when I came across all the MES issues there were only bits and pieces of info that had to be searched out and sandwiched together but still didn't give the full picture. My hope was that...
Congrats on the rewire!!!
Yeah your braided wires are red and blue. As long as you go smooth white to braided and smooth black to braided, you have completed the rewire!
Soon you will be full blown PID operating :D
So I did this with my Aroy-D and it's about 1hr 45 min and I had to try it. The top is fairly firm but no issue getting through it with a spoon. The bottom and middle still needs to firm up more.
So far I'm liking it and though it's not exactly the texture of ice cream, it is still very much...
If you don't have a panel to it, it will be wise to cut one in the back so you can have easy access to the switch. It never fails that the switch will go bad on you while in the middle of a smoke.
At that point if you have a panel you can at least cut out the old switch, wire nut the 2 wire...
