Not legit ranchero but is how it is served here at the local joints (mexi rub/steak al carbon seasoning). Star of the show was the rice. 5m rice with 1/2 Salsa Casera (Herdez) and a little chicken boullion powder (of course rice got heavy toast in oil first) All was pretty easy to bang out too. Would eat this once per week if I could. Will take some effort to find more T-bones as my go to is gone. The dream is charro beans but the refried are no fail. I thought the pic turned out a little better than typical so thought you guys might enjoy.

Yeah that kind of rice is amazing. What I find wild about it is that it is not hard to make well, it is just difficult to NAIL that perfect amount of tasting. 10 seconds too much or too little and boom the perfect rice is gone but amazing rice still to be had.

As for charro beans, they become refried beans at the end of the week when you have so many around and don't want them to go bad. That is how refried beans came to be :D

Pine Street diner . St. Louis Missouri . 3 blocks west of the Mississippi .
Opened at 4 am . Big time construction eats when working in the city .
Whatever you ordered the first time in the door , is what you got every time after that . They did fried potatoes instead of hash browns . We had to beg to get onions in the potatoes .
Two old gals working there , and when we walked in the doors , the one working tables would yell out " Onions in the spuds !" I guess so the one on the flat top knew to chop onions .
How the hell she remembered what you had is beyond me . It'd be 6 months and she'd say , 2 sausage , 2 eggs , onion in the spuds and sausage gravy on top . No toast , black coffee .
The answer to that was " yes ma'am .
The gal working the griddle smoked cigarettes . Damn ash an inch long hanging on the end . She had a 50 / 50 success rate of flicking the ash on the floor . The rest ended up on the flattop ,,,, mixed in .
Dang, that’s crazy, amazing when you find it 👍
