Favorite wood for spares?
my goto is always hickory but I have done a mix of hickory and apple or cherry and it turned out pretty good -

As much mequite as I am surrounded by, hickory is my favorite. -

Company picnic help
I would go 2 and 2 on th meat (anything leftover comes home with the cook and goes great in beans or enchiladas). Sounds like u have it all under control, keep us updated- lawdog

Mesquite Honey
I have a buddy who has moved back to W. TX to set up a "bee farm". He had his bees pollinating mesquite trees all summer and has provided me with a load of "pure" honey right off of the comb (more solid than squeeze out of the bottle type).
