We’re going on vacation next week and the house we’re staying in has a Weber kettle. I cook on a kamado Joe all the time but have never cooked on a kettle. What do I need to know? Is it better to use briquettes or lump? We’re going to the keys so any fish or shrimp recipes would be...
I am trying to feed leftover pulled pork to a group of 30 Friday night. We have two of the small foil trays from Sams rounded over with pulled pork. Also have a big tray of corn off the cob and two small trays full of baked beans. Not worried about the beans or the corn but will 2 trays...
So I went to my local Costco the other day and they had corned beef. Some were flats and some were points. I bought a flat and had a successful cook last week. I went back to stock the freezer with a couple and all they had was corned beef rounds. So I understand where the flat and the points...
Had enough of mine. Turned out a lot of good food over the years but I recently lost a brisket and two Boston butts to the same thing. Left it warm with meat on and woke to no temp and raw brisket. Replaced with a recteq Bull.
I know it’s not really a hot sauce but I love zaxbys tongue torch flavor. I’ve tried copycat recipes and tons of commercial wing sauces and haven’t found a match yet.
Just bought a recteq rt-700. Haven’t had a chance to fire it up yet but I put it together yesterday. That thing is heavy and appears to be very well built. Happy so far.
I've had my kamado joe for four years now and absolutely love it. I understand they are experiencing some issues with deliveries and timeliness on warranty claims lately but its a solid kamado. Hope they get their act together because my experience has been top notch so far, aside from delays...
We started making an abt casserole. Same flavor but easier. I seed and slice the peppers and brown them in a pan for a few minutes. Then mix them in with the normal sausage, cream cheese and cheese filling and put it in a 9x9 casserole dish and into the smoker. So much easier and same taste...
I think I have all the popular books people recommend on here including adam Perry Lang’s serious bbq and Aaron franklins book and love both of them. I don’t have peace, love and bbq though but it’s on my Christmas list.
They delivered my warranty parts recently without issue but it took 2.5 months to get them. They replied to the email within 3 days and said they would send tracking info when it shipped. I never got tracking info but got a call from the trucking company the day before. It worked out and...
Update on this one. I started out with a cured corned beef flat about 4.5 lbs and soaked it overnight to make sure it wasn't too salty. Rubbed with the pack that came with it along with some cracked pepper and a steak rub I had on hand. I cooked the pastrami on my kamado joe with plenty of...
I bought a corned beef flat the other day and want to smoke it this weekend. I've done this in the past and it was ok but a little tough. Any advice on how to get it more tender? It was so long ago I really don't remember details. I read a lot about people smoking and then steaming in a...
I love my kamado Joe. Well over 250 cooks on it and use it at least twice a week. Never cooked on a big green egg but the included accessories that came with the joe along with recent innovations swayed me in that direction and I’ve never regretted it.
