    Tripe Soup

Man I haven't had good tripe in years. My mom would make it for Dad and me, we were the only ones in the house that would eat it. We're Italian and Mom would make it in a tomato-based kinda spicy stew. It was a little thinner than a regular stew but it potatoes and cannellini beans. Brings...

    SMOKED DEER HIND QUARTER

Ok, I have done a full on the bone hindquarter before and it came out great. Did it in my big GOSM smoker, next time it will be on the Camp Chef DLX. Here's what I did: 1. Make a brine. 1 gallon cold water, 1 cup kosher salt, 1 cup brown sugar. Double or triple the amount of brine if you...

Inkbird Vac Sealer request code question

They will PM, but as the previous poster said it takes a little time due to the geography. I'm on the east coast and I seem to get the responses from them between 3am and 5am local time after I reply or request something from them.

    Venison snack sticks

I recently used the Hi Mountain pepperoni snack stick mix for some venison sticks. I think I made 10lbs using 7.5 lbs of venison cut with 2.5 lbs of pork fat. They came out really good, although I would have liked them a bit spicier for my taste.

    Pellet smoker advice please

What is it that makes you think you're giving up your "decision making integrity" by going with a Camp Chef? A lot of us here own CC products and are very satisfied with the build quality, features, availability of accessories and especially the customer service from Camp Chef. Don't sell...

    Grey Squirrels

I love squirrel, but if I was going to smoke them I think I'd brine them at least 6-12 hours in yiour basic 1 gallon water/1 cup kosher salt/3/4-1 cup brown sugar first. I wouldn't use any brine that has a curing agent in it though, like Pink #1 or Tender Quick. The bacon wrap would probably...

    Camp chef xxl vertical

I love my XXL. I don't use it as much as my CC DLX, but for bigger cooks and bigger cuts it's great. Because I'm such a gear nut I bought the couple extra racks from CC to fill it to capacity should the need arise and I have the cover and the blanket. Mine holds temp really well, I even...

Bear Jr’s Craft Cabinet (Bethany’s Christmas Gift)

That is just awesome! I wish I had those kind of skills!

    Bear’s Simple Deer Chili

I do almost the same except I use black beans instead of kidney beans, and when I use venison for the ground meat it's usually 100% venison. I don't see any need to cut ground venison with pork or beef if it's going to be browned for chili or sloppy joe's. I will use the pork/beef blends for...

    Picking the right Pellet Smoker....

No complaints with any of my Camp Chef products and their customer service is first-rate. They also have a bunch of features on them (ash cleanout, pellet drain, add-on attachments) that some of the pricier brands don't offer.

    Uncured Ham Roast

Brining and injecting probably would have helped.

    Jerky Boards - Worth it?

I've had the wood version of the Hit Mountain jerky board for year and have no complaints. Keep the knife nice and sharp and it does the job. I even use the knife for slicing brisket until I get around to buying one just for that purpose.

    What IS Your Favorite Wine

I grew up learning to make wine so my favorites are the wines (mostly reds, but I've made some white before) we make. I actually have a press in my basement that's been in the family so long that my grandfather used to come home from school as a boy and part of his "job" was to give it a turn...

So THIS happened the other day...could use a couple recipe ideas

So I retired a year ago after almost 34 years as an LEO and about a month ago I realized a lifelong dream and bought myself a new hunting partner. Ginger is a 2 year-old English Setter. I took some time to bond with her and now that deer season is winding down I decided it was time to get her...

    Venison Ribs

Not a bad thought, but then you're really talking about the loin (backstrap) meat rather than rib meat. I agree 100% with archeryrob about the regional differences in deer. Up here in NY unless you're in farm country where there's a lot of corn and other crops that the deer are feeding on the...

Smoking a deer hind quarter. I have a question.

I brine with a cup of kosher salt and a cup of brown sugar to a gallon of water and whatever else you like to add in. Double or triple the amount of brine if you need to to cover the quarter in a brining pail or cooler. I inject some brine deep into the quarter as it's a pretty thick item on...
