    Pecan shells

Has anybody ever used pecan shells instead of wood?  My mom always talks about how my dad use to use pecan shells because one of his clients owned a pecan orchard and he got them for free.  I have been tempted to recreate the old man's magic but have gotten mixed reviews when I talk to people...

    Ribs with sauce question

It is my mom's birthday today and she asked that I cook ribs.  I have ribs down pat but she asked for me to make a slab with sauce on them.  Putting my bias towards ribs with sauce on them aside I agreed.  Do I wait till the last hour to sauce them up and do I rub them down as I normally would? ...

    Brine or Inject

I am going to try Tips brine this year and will inject the breast.  The brine calls for a gallon and a half of water and all of the seasoning.  I am pretty confident that the gallon and a half won't cover my bird.  If I do three gallons of water do I need to double the rest of the recipe or will...

    Brine or Inject

Wow looks like brine is the clear choice.  I have always injected stuff cause it is fast and easy, but as I get more involved in smoking I have this new desire to make my turkey go swimming this year.  Just so I am sure some of you are saying you would brine the turkey and inject it?

We all love to cook on here, but it doesn't always go our way.  Wanted to hear some others worst cooking experience.  Mine was the first Christmas with my inlaws.  My Father in law isn't a slouch in the kitchen, but I am confident in my abilities since my background was in the kitchen and he...

I didn't stop experimenting in college

I marinated with Allegro marinade, then rubbed it down with spricy brown mustard, coarse black pepper, and salt.  I have two more half racks in case this turns out terrible. Lemon pepper seasoning.  Sounds wierd, but when it cooks it cooks out the alot of the lemon and turns out some of the...

    Getting creative with leftovers

I have a bunch of grilled sausage leftover from yesterday and was looking for ideas for it besides just doing sausage dogs.  I had seen where somebody was doing burnt ends with sausage and wanted to get some opinions on how you think cooked sausage would do if I threw them in the smoker for...
