    Idea for a beef roast

    If any of you have access to "Tastefully Simple" products, rub some of their season salt on the out side of an arm roast and sear it on a hot grill. now wrap it in foil and cook at 250 deg. untill desired doneness. Yum Yum

    Do you need to use a pan of water in the smoker? I am using a Brinkmann vertical, or can I elminate the pan and use a mop instead?

    Thanks Meowy & Randy, I know the temp gauge is off, I put one on the grate and it was off by 50 deg. I look at it this way, half the fun is learning. We re-group and hit her again next Sat.
