Sounds like it will work, but if your not happy with it I suggest you keep trying. Half the fun is figuring out the process. I would love to smoke every weekend just to try new things.
Your killin me here Debi, this toast and coffee just ain't cuttin it. Doin a chicken next week, and ordered 3 racks of ribs for the 14th of July so I get the freinds off my back. I'll feed em Que and they will leave me alone......I hope. ENJOY
The next time I do beef ribs I will have the knuckle cut off, I will remove the membrane on the bone side (makes a big difference when your eating it, it doesn't fight back) and my wife loved the ribs that had the Jack Daniels apple juice olive oil spritz. The spritz gave it a nice mellow...
Here are pictures Ribs came off at 3:30 at 190 degs. Next time I will remove the membrane on the under side, it caused the ribs to be tuff. BUT the flavor was fantastic. Next a brisket.
Ribs went on at 10:34 A.M. it is now 1:04 P.M. and they are at 170 deg. cooking at 225 - 250 deg. Sprayed twice already with apple juice, looks like we will be eating before 6:00 P.M. unless I take them off and wrap them in foil.
I had the same trouble, I built a plywood 3 sided sheild four foot high for mine and it works great. I now can get it up to 250 to 275 if I'm not careful. Alos my first chimmney of charcoal will now last 3 - 4 hours
Sounds like a Minnesota milk can boil to me. Put everything in a old fashioned milk can put the cover on, drink beer, when your done so is the milk can
