    Did a whole hog in the Caja China last weekend. Turned out awesome. I was told that it was the “Best pork I’ve had in my life”. Used an A-Maze-N smoker tube and it work great. Kept smoking the whole cook. Took about 5 hours total.

    Doing my first whole hog this weekend. Using a Caja China. Noticed a lot of stubble on it. Is this amount of hair normal? Should I leave it on or try and remove it? Would torching it make it taste like burnt hair?

    I’d do the same as smokinal. Lowest temp on your oven usually 170F. Or if you have a vacuum sealer and sous vide, I’d seal it in a bag with some beef stock to keep it juicy

    I’m in NY. Last year my food distributors wings went from $60/case to $120/case during playoffs until super bowl. Supply and demand. Sucks this time of year but I got 2 packs of fresh “wingettes” from Walmart yesterday. 2 dozen wings only cost me about $10.

    It’s all good. No such thing as a stupid question. Beef prices are INSANE right now. Briskets cost a fortune at these prices. But leave that one for st patties day. I’ve been patiently waiting for packers to go on sale. Been eating a lot of pork and chicken lol.
