    New Uds Build

That is a hoss cat charcoal basket. You probably won't even need to fill that puppy half way to get a full smoke. I cooked ribs last weekend and filled my basket full about 6-8lbs worth of lump and used about half (6 hrs.) on windy day. Everything I read on the distance from meat to heat was...

I had this el cheapo walmart charcoal grill forever, I walked past it in my building and thought maybe I could use that for the newly built UDS. It has a good handle on the bottom part and thought it could work as a charcoal basket for small or short cooks. What do you guys think? I almost...

    Finally...My UDS is here!

After months of consideration and contemplation, I have BBQ bliss! I got the barrel from a local farm supply store for 12 bucks and it was clean and unlined on the inside with small amounts of rust. I got a barrel, lid, and ring form a coworker (both the lid and barrel are lined, yikes! I'm...

    Spare Rib Question?

I'm going to be smoking two racks tomorrow and was wondering what method would be the best? I used the 2-2-1 method for BB last time and they were good except I would prefer for them to slide off the bone instead of fall (wah! my own quirk). I've read the 3-2-1 method is the best for spares...

    Looking to buy a gasser

When looking to buy a gas smoker I to looked to get a GOSM but couldn't find one in stock. I went with the smoke hollow #5 which works, and looks like a GOSM. I saw the floor models for both brands and felt like the Smoke Hollow was more sturdy. Mine works very well and maintains temp to a T...
