Chuck roasts were on sale again BOGO free, so I decided to try out my new food saver. I also wanted to try out some new rub that I picked up at Kroger for pretty cheap.
Here's the brown mustard/worcestershire slathered and rubbed roast:
I used a different rub that I mixed up that contained...
It's all good. Like, I said, I'm no expert. To be fair, I've been getting back into smoking this summer. Got a black Friday sale MES30 to replace one that crapped out on me. So, it's been over a year since I've been bbq'ing regularly.
I did one a little over a month ago. They were both about 3 pounds. I had the smoker hotter last time around 250 for the whole smoke because I was using the chip loader instead of my amnps. This time was the first smoke that I started using the maze again. I had to replace my old MES30 and...
I forgot to take pictures early on. But, I mostly followed this process to smoke : Https://www.smoking-meat.com/january-19-2017-smoked-chuck-roast
I did it with a sweet rub and mustard. But, I put a little bit of worcestershire on before I used spicy brown mustard.

I'm planning to smoke it pretty much like this https://www.smoking-meat.com/january-19-2017-smoked-chuck-roast
There was a buy one get one free sale at the grocery store a little over a month ago. I did the first one the same way and liked how it turned out. But, I froze the other one for...

I noticed that there is a spot of grey on the roast. I...
I'm not sure if you ever found this, but search for candied jalapenos or cowboy candy. I love the stuff. I cold smoke them beforehand and they are incredible!
Elote is one of my favorites to get in Mexico. I actually just recently made some myself last week.
Parmesan makes for an ok substitute for cotija also. If you can find Tajin, it goes great on these also.
It's been a long time since I've posted anything. My MES30 died and I only recently started using my replacement MES30. Sadly, I quickly realized that my A-Maze-N pellet smoker doesn't fit in this new MES. So, I've been using some small chunks in it instead so far. I smoked a chuck roast...
This stuff is the truth!
I have never tried them without cold smoking the jalapenos first, but man oh man, that is a tasty treat. I gotta make a batch soon.
