I'm looking to buy a UDS
To echo the others, you can build it with minimal tools. An adjustable wrench and a drill is about it. You may have to spend $10 for a hole saw bit to go with the drill. Delayed gratification pork butt
I've done a couple parties now and the crock pots have worked out great! After you've smoke and rested the butt, save the juices if you can so you can add it back the next day. Put your juice in the fridge and scrap the fat off the top the next morning. The next day when you load the crock... -

Some how i lost track of your thread. Looks great and congrats on a successful smoke! Those overnighters with a buzz are rough anymore. LOL BTW, when I was in walmart yesterday I checked on the points and they had them there in a prepackaged type wrapper (not a cryovac package). -
Rib question
As the others have already stated. Anymore I normally only go about 1 1/4 hours in foil. Just adjust your timing to find te sweet spot that you like. -

Mopping in a UDS
The UDS has become my primary smoker over the gasser. As the other have said, yes, you can spritz and/or mop just have everything prepared and hit it quickly and get the lid back on.
