    Help with making Jerky...

Ok, I gave it a whirl, I ended up doing it for abotu 13 hours(They're still going actually) at about 130, they're still a little somewhat juicy, so I kept putting them back in, perhaps the meat I chose was too fatty, i'm not sure.

    Help with making Jerky...

Yeah some said do it at about 150 for 24 horus and soem said do it at lower for longer. I'd liek to have smoke flavour, but really, it's not a huge problem if there isn't. Really what I need is a good solid timeline for cookign it, how long at what temp is what I really need to know.

    Help with making Jerky...

My Centro/Masterbuilt Digital Electric Smoker just arrived today and I need to take it's smoking virginity correctly hah. So I figured what better way to do that than making some jerky. All I need though is a decent step by step recipe for jerky, I've heard the best meat for it is flank steak...

    Blue smoke here this a.m.

Lucky, I went later on, they were plum out. Although I do love the power of rainchecks as they order one in for me and I picked it up last night, great looking thing. So, how did the jerky smoke go, thats what I plan on using it for.

    Success with modified 3-2-1...

So I did a smoke on the weekend, first one of the spring I was so excited. Did some pork side ribs, and decided to go for the 3-2-1 method again but switch it around a little. I went with 2-3-1, put about half a coffee mug of apple juice in each package. I'll tell you It was difficult for...

    Smoking Podcast...

Cool, so there are actually some out there. I still think one from here would be neat though, it has the community to go with it. A video podcast would be good, but I think it`d be more work to do. If Tulsa Jeff did it on his own, it`d be pretty easy. CastBlaster is a program thats really...

Anybody here listen to a lot of podcasts? They're essentially just pre-recorded radio shows. A Podcast for smoking meat would be great, feature tools, recipies, talk about up comming events. If anybody knows of one, send me the link i'd love to listen to that.

How big of a Pork Shoulder do I need?

Hhmmm ok thanks. I'd rather do as much as I can in one go, as they do tend to take a lot of time. And my other smoker is being used for ribs. But atleast I have an idea of how much I could get out of one. And for future reference, a shoulder is essentially just a butt and picnic roast...

How big of a Pork Shoulder do I need?

I'm looking to feed a lot of people...roughly 50 people. (Mind you not solely off of one pork shoulder, but there will be tons of other foods, ribs, and various other picnic foods). SO say roughly one pulled pork sandwich per person, roughly how big did I need it to be. I hear they do feed a...
