I'm glad to see success with some other cuts and types of meat. I keep wanting to buy the leg of lamb when I'm never sure if it would turn out. I think I will be more confident next time I go shopping. Great pics!

I'm really satified with my modded silver smoker but it seems each time I start it up more and more people stop by. So sometime I might need a little more capacity.

I have to recommend taking Jeff's 5-day eCourse. Huge help.
I think in it he recommends using about a 90% charcoal and 10% smoking wood combination, which basically has worked great for me. But I could be mistaken but this is the place to find out. Happy smoking and welcome again.
sounds like you need a good thermometer. Usually for meat around 230F is a good smoking temperature. It's probably so cold up there in alaska your losing all your heat to the surronding enviroment, which also depending on the design of your smoker may contribute to a temperature variation...
