Smoking Boston butts with the new Kingsford Sierra smoker. I've smoked meat for over twenty years, but this is my first offset barrel smoker. It got mixed reviews, but mine seems to be fairly decent for a cheap offset.
It is widely believed that you get the best barbecue flavor from an offset barrel smoker; however, you have to tend to them constantly. The WSM is pretty much set it and forget it. Also, you would have to do some mods to the highland. If you're looking for hassle free smoking, get the WSM. If...
I want to design my next smoker, but some of the steel prices I'm encountering are downright insane. Do y'all know of a source of affordable steel sheets?
Welcome to smoking meat forums. I recently got an offset barrel smoker myself. It was a late birthday present for my brother, but it looks like I'm the one using it. That's okay, when I get one for myself, I'll know them fairly well.
I'm glad to hear that because I'm considering an Oklahoma Joe myself. The smoker I just bought is a late birthday present for my brother. The one I'm thinking of is the reverse flow Longhorn.
It depends on whether or not a shot of money comes through for me. It could go either way. If it comes in, I'll get a Lang. If not, an Oklahoma Joe later.

It's a Kingsford Sierra. Made out of thin steel
I plan to season it again at the nearest opportunity. Today I'm going to smoke some leg quarters on it.
I didn't have enough charcoal to get the heat up to 225. It was around 220 for over an hour. I'm going to have to season it again huh? I've opened up the dampers and chimney some in an attempt to raise the heat level and hoping that will work.

I'm seasoning the smoker now. I read some negative reviews of how it holds temperature, but it's holding temperature just fine. I guess a Kingsford is hit and miss in quality. It does need a wood stove gasket kit to seal up a few places, won't last as long as a thicker smoker, but for $159.99, I...
