    Skirt steak sammiches with Q View

    Epic, purely epic. Did one early with more smoke for giggles, but I did a mushroom pesto spread with fresh tomatoes and some vinegar and these two day marinated skirt steaks that have been sitting in lime, cilantro and olive oil. WOW what a fantastic way to enjoy skirt steaks.

    Thinking of trying to do some this weekend. No, not what your brain took you to...I want to do up some ground turkey or chicken and smoke em, sauce em, etc. What sauces or recipes have you guys tried?

    Didn't take a pic when I plated em up, got into a feeding frenzy when a buddy stopped by. The sauce is to sweeten it up like cocktail meatballs, turned out very very tasty.

    Had to do it after seeing a couple other posts on them, garlic onion meatballs, been smoking 2 hours, just popped up to 225 to finish, then into the grape jelly/spicy chili sauce for a nice hot bath. Here's the first couple of shots.

    That's a good price for those knives. I am a Wusthof snob, love the Culinar series, full stainless tang and handle, ergonomic and balanced. Love me some good weaponry. Save yourself the counter space and get a magnetic wall mount for them, show off the weapons properly.

    Couple of shots, temp is at 118 just hangin on smoke setting for now, will bump it up in a little bit to 225 on the digital (Traeger 075)

    Since my brain surgery last week (I have downtime to kill while recovering) I have been smoking up everything I can get my hands on, doing some for my cousin's catering, doing some for neighbors, and some for myself. Did Turkey, Steelhead and delicious sliders yesterday....now it's not even 4am...

    Hello from Tacoma, WA!

    Welcome from across the state and border, am pretty new here myself, great bunch of folks on here with plenty of help. I have a Traeger 075 (Texas) if you ever need any ideas or help with deciding which one, I always felt bad when I didn't buy the bigger one, the Texas is the perfect size.

    Thanks Rivet, I will try this one, and add in the leftover juices from the foil to it. Bueno...gotta love smoking every day, never get tired of it at all.
