so, i'm along for this ride, as i'm also designing a backyard grill & smoker that i plan to build at least partially with reclaimed brick from my chimney that i removed last year. i'm interested in how far you got before winter set in. i have a few considerations and thoughts... so if i seem...
so, i figured it out. it was actually my ad blocker. weird that it only did this after the ads were removed. maybe it was lonely and wanted something to block. i don't run an ad blocker on chrome, so that makes sense why chrome worked.
sooo... donated yesterday... and typically use firefox for my daily browser. after upgrading, i get a blank grey page in firefox. chrome works fine. i've cleared my history... and i can load pages before i log in, but once i log in i get the grey page of death. thoughts? can i only use...
that's the problem, though... i can't control the temps because (i think) it leaks so much. it's either 235 or 300 (or higher - ran it at 425 for some hours to season it, but that was with everything wide open), nothing in between.
i also reached out to the old country folks to see if they had...
well, i bought some lavalock gaskets and put them on the thing. afterwards, i noticed on the firebox that there's a 1/8" gap at the top of the firebox lid. on my old one, i could just bend it into shape while it was cool, but this is 1/4" steel - i'm not sure if i have enough oomph to bend...
so, the pork butt i did was great fresh, but the next day was pretty dry and needed sauced to help it out. i'm not really a fan of shredded meats - much prefer to sink my teeth into a hunk o meat, but i had to try it at least once.
it went down the road with a friend from high school - said her cousin had wanted one for a while but was hesitant to buy one. hoping he'll get some good cooks out of it.
so, here's an update - the rack that i did not trim was sooooo much juicier than the one i did. not as prominent of a smoke ring, but thats to be expected.
they are tasty - and take less time to cook. plus you get that rub flavor with every bite. 2 racks did cost me more than a prime brisket 5 lbs heavier though. i think brisket is still my favorite - i can fit 30 lbs of brisket on my pit where i can only probably fit 20lbs of ribs.
okay. so those were delicious. not as juicy as brisket.. but then we only ate the rack that i trimmed the cap off, so that might have something to do with that. like burnt ends except every bite was a burnt end. and now, for the pics...
resting
unwrapped
and sliced. the eating part...
6 hour mark. IT is 160 or therabouts. bark is looking nice. having trouble keeping the temps steady. the thing seems to want to swing wildly. this doesn't seem to draw as well as the char griller. i might have to do a stack extension. ghetto fabulous.
