Sounds like you have a pretty heavy duty smoker, so once it gets heated up, as long as there isn't a lot of wind, and maybe a bit more wood used, you should be fine. You might freeze your tail off tending it :-)
Finishing in the oven after wrapping is the only way to go for me.
Thanks, Brian! I made a couple of loaves last week and I didn't use the discard to get another starter going for fridge and weekly feeding. I may regret that, but I only do sourdough every month or so and I was tired of using up flour.
I have some dried crumbled starter but have never used it...

You're probably going to get that at the smaller "Mom & Pop"/Convenience places.
They don't have the option to get rid of old stock like the bigger groceries and hang on to it. They think, like a lot of us, that canned goods last forever. It's true, but only to a point.

I take those "Use By" and "Best By" dates with a grain of salt. I don't worry about a year or two but I'd toss those items. Like Nodak said, they aren't that expensive....
Even if they don't make anyone sick, the flavors may have deteriorated.

I use the range and oven regularly so I can't imagine losing that.
I gave away the Instapot last year. It was a gift and got used twice. Same with the slow cooker. There isn't anything it can do that I can't do with a C.I Dutch Oven.
