John Barleycorn and I have been friends for a long time :emoji_slight_smile:

I need to check into these "hot dishes". Sounds like what they call casseroles around here.

Frigid temps impact on smoking a brisket?

Sounds like you have a pretty heavy duty smoker, so once it gets heated up, as long as there isn't a lot of wind, and maybe a bit more wood used, you should be fine. You might freeze your tail off tending it :-) Finishing in the oven after wrapping is the only way to go for me.

    Sausage & Barley "Stew"

Thanks, Brian! I made a couple of loaves last week and I didn't use the discard to get another starter going for fridge and weekly feeding. I may regret that, but I only do sourdough every month or so and I was tired of using up flour. I have some dried crumbled starter but have never used it...

    Sausage & Barley "Stew"

Thanks to all for the likes and comments! @Brokenhandle , Yeah, it's a tough call. Do I make it thick like I like it or soupy so I can "dip"? Decisions, decisions, decisions......

    Sausage & Barley "Stew"

In keeping with the comfort food run here lately I thought I'd share one of our favorites. An ex coworker wrote this down several years ago. I don't know where he got it. I think he made it up himself. As written: 3 Tb butter or olive oil 1 package baby carrots 3 stalks celery 1 medium onion 1#...

I still don't know what a "sticky" is....

    Use dates

You're probably going to get that at the smaller "Mom & Pop"/Convenience places. They don't have the option to get rid of old stock like the bigger groceries and hang on to it. They think, like a lot of us, that canned goods last forever. It's true, but only to a point. This has me thinking...

OK, how do I find this site? Google is running me in circles....

My whole house smells like jerky!

OK, you did it again, Sherry! Now I have to go up in the attic and bring down that dehydrator that I haven't used in years. My tired old teeth don't like regular jerky but I think they could handle this. I miss jerky.....

    Use dates

I take those "Use By" and "Best By" dates with a grain of salt. I don't worry about a year or two but I'd toss those items. Like Nodak said, they aren't that expensive.... Even if they don't make anyone sick, the flavors may have deteriorated.

    HeMan Soup

I like this!! Kind of like a stew using ground meat. I've never had anything like it, but now I have another bookmark LOL! I made Haluska (Cabbage & Noodles) yesterday, which also uses bacon and plan on trying this. I'm going to have to make more bacon soon. I seem to be running low :-( Yep...

    Pizza Sauce Recipe

This isn't "mine" but most likely came from Allrecipes. I've been using it for a while now. 1) 15oz can of tomato sauce (No Salt Added) 1) 6oz can of tomato paste (No Salt Added) 1) T Oregano 1.5) t dry minced garlic 1) t Paprika .5) t Basil 1) t sugar You probably noticed the lack of salt. If...

    Binders

I tend to agree. I tried an Irish sausage from Rytek Kutas' book and it called for 10 cups of breadcrumbs for 10# of meat. It seemed like a lot but I'd never made it so I went with 5 cups for 5#. It was terrible, more like bread stuffed cases. Had to be a typo or misprint. As for a binder, I've...

    Cookware Anonymous

I use the range and oven regularly so I can't imagine losing that. I gave away the Instapot last year. It was a gift and got used twice. Same with the slow cooker. There isn't anything it can do that I can't do with a C.I Dutch Oven. The "can't do without " are the stand mixer, food processor...

    Sear temperature for steaks?

Never mind the temps on a grill. Go with your gut. I think you nailed it :emoji_wink:

    Think about it

Dad told me that they used to trade a cow every winter for a couple of pigs and it was a family affair. Everyone had a job, from skinning to lard making to cleaning the intestines. Like you said, they used everything for something (This was in the '30s with 7 children). Being from the south, I...

Another great idea! They look good enough for me to copy ;-) And hang on to that "Man Card". I haven't cooked outside in almost a month.....
