They are full packers. Never bought a brisket before so I don't have much reference on the fat cap. They have a lot of fat compared to any other cut of beef I am familiar with.
Just returned from Costco and they have Cryo packed USDA Prime brisket for 2.99 a pound and butts for 1.99 a pound. Seemed like good prices. At least I hope so since I bought a brisket and a 2 pack of butts. Now I just have to decide which I will try first.
