    Costco finds

They are full packers. Never bought a brisket before so I don't have much reference on the fat cap. They have a lot of fat compared to any other cut of beef I am familiar with.

    Costco finds

Just returned from Costco and they have Cryo packed USDA Prime brisket for 2.99 a pound and butts for 1.99 a pound. Seemed like good prices. At least I hope so since I bought a brisket and a 2 pack of butts. Now I just have to decide which I will try first. Big Glenn

    New Gasser

Finally finished the initial burn in. Put it on high and let it go. I was amazed how fast it heated. Up to 250 in under 5 minutes. I had tested the built in thermometer in boiling water. It read 208. Tested my new Therm Pro in boiling water. It read 211. Seemed close enough. A few minutes later...

    New Gasser

inally got to open the Pit Boss propane my wife got me for Christmas. My first real smoker. What follows are my initial experiences. The box arrived in good shape and everything seemed packed well. The assembly instructions seem clear enough. Total assembly took about 1 1/2 hours. Here is the...

    Hog Jowl

That sounds good however I am new to a lot of this. Not ready to try curing but bacon is on my list of things I want to learn. I was thinking more like treating it like a butt or maybe making burnt ends

Love this thread. I enjoy many of the things already mentioned, but one that hasn't been yet is mayonnaise on saltine crackers. Preferably Duke's mayonnaise.

    Another Turkey

I wanted to smoke a Turkey for thanksgiving but since my new smoker is to be a Christmas gift I decided to give it a try on our gas grill. When looking for a unmolested turkey all I found were breasts, so I got the biggest one they had. My plan was dry brine so I rubbed it down with kosher salt...

    Question about turkey

    Question about turkey

I am planning to dry brine then bacon butter a turkey. How do you get the salt to stay on the turkey? Maybe it won’t be an issue, just trying to head off any issues. Any comment on my plan would be appreciated Big Glenn

How did you get started in grilling and smoking.

I don't remember our family grilling much except when we were camping, which usually involved incinerating hot dogs and hamburgers. As a teenager I begin to love BBQ and would search out BBQ joints. As I got older my friends and I begin having keg parties, often outside, which of course demanded...

    Hello from East Tennessee

Thanks everyone for the welcome. In spite of the lack of reviews I have decided to go with the Pit Boss 3 propane. My wife wants me to wait until Christmas. We will see about that. I think what convinced me was the dual burner system. One small burner and one large burner for a wider temp range...

    Hello from East Tennessee

Hello all. I have been lurking here for a while and decided it was time to join. My history with smoking is limited. When much younger, some friends and I would smoke whole or half hogs for large parties. Fast forward a few years and I smoked some turkeys for family holiday meals. In the last...
