    KFC

Here we go. I’m really happy with the results but I am going to say that I should have used much more spice in the batter. Other than that it came out pretty much perfect. The lack of greasy oil was really awesome. It was just super juicy as crispy. I’ll be doing this on a regular basis. G

Here are the first two pics. First the battered chicken. Second the chicken right after the first flip. Just waiting for them to come to temp now. G

    Hot Smoked Salmon?

So many great ideas and so much awesome advice. Thanks to everyone. I am very excited to give this a try. I'm pretty sure I am going to go with the dry cure process before smoking. Hopefully, I can give this a try in a week or so. G

    Corned Beef Sales?

Sounds like a plan. The recipe that I found to work really well pretty much uses a bottle of Guinness, some beef broth, a half head of garlic, some brown sugar, and a half of an onion. In the Instant Pot and 90 minutes later that corned beef is awesome. Of course you can do the cabbage...

    Hot Smoked Salmon?

So I really want to give this a try this year. Anybody feel like they have a really solid method, spice, wood type that really would be a great way for me to get my feet wet with this kind of cook? G

    Corned Beef Sales?

I'd love to do a full packer brisket corned beef cure on my own but I can't figure out where I could keep it. I'm no sure I could create enough space in my fridge for that to cure for all of the time that it takes. I've really come to enjoy the traditional method of cooking in Guinness. I did...

    Covid Vaccine ?

I have had both doses now. The second dose seems to have hit me pretty hard with a lot of body pain. I guess if you are completely out of shape like me that should be expected. Do yourself a favor and take better care of yourself than I do. That being said I feel much more secure visiting my...

    Work Free Smoke Place

Wait til you see what's become of my OKJ. I keep meaning to give it a once over and then I just smoke on it. I guess I really do have to address that rust though lol. The kettle is looking good though. I'll definitely share my smokers paradise shots on Friday. G

    Corned Beef Sales?

Anybody in So Cal seeing a really exceptional price on corned beef at any of the grocery stores? I would really like to stock up if I can find a great deal. The best price I have seen so far is the Blarney Stone brand point cut for $1.99lb. Flat cuts seem to be bottoming out at Walmart at...

    Work Free Smoke Place

I'm so embarrassed. I live in a trailer park and realize my smoking space actually looks like it too. You all are inspiring me to make my smoking space more like a refuge. I'll take some pics and share my mess with you all on Friday when I am off of work. G

Should I Buy a Pellet Grill?

If you like the idea of the performer kettle there is always the ultimate charcoal choice from Weber the Summit. It’s pretty high end at $1500 but can do everything your normal kettle can do plus it’s insulated like a kamodo grill without the insane weight or cracking. Of course you have the...

Should I Buy a Pellet Grill?

Honestly if the Masterbuilt doesn’t feel simple enough for you then my guess is that you should probably not consider anything with electronics. A Weber kettle will fill your needs for a fraction of the price. All you need is a charcoal chimney and a lighter. It will grill perfectly no matter...

Should I Buy a Pellet Grill?

I don’t have the Masterbuilt but if you are worried about the simplicity then just watch this video. Charcoal grilling doesn’t get much easier than this. G

    KFC

I’m looking forward to trying this out. I watched a few YouTube videos for various ideas and tips. I’m going to try making a beer batter for it and we will see how it comes out. I’ll definitely post some pictures when the great experiment is completed. G

    KFC

Kettle fried chicken. Have any of you tried this with your vortex and kettle? I found a beer batter recipe that sounds great and I really want to give this KFC a try on my kettle. I’m going to be making this sometime this week. I’ll post some pics and my results afterwards. Take care everyone...

Hey there from windy Riverside. It’s always nice to see someone else from Cali join in. It’s definitely a great place to “chew the fat “ and the meat as well. Be safe and take care. G
