I tend to wrap and put into a disposable dish as well one I get the color, mainly for ease of keeping the meat moist, and for cleaning. Never got any complaints :emoji_sunglasses:
Welcome! Nothing wrong with a modest smoker, I did some decent (at the time) bbq with a real tiny little garage sale 5$ grill thing. Looking forward to the thread

The parents are wanting to do a roast beef type dish for Christmas. If it was me I'd smoke it, but they dont have a smoker, so wanted to see if you all had some recipes/tricks for an oven roasted beef roast type. Im open to any type of cut, preparation, so any and all ideas...
What I do is go to my butcher store, and buy a few steaks and things, and they are always happy to throw in a few feet of butcher paper (I dont get the big pieces of meat there). It's really an excuse to go splurge on some good steaks.

So I decided to do try something a little different for my last party, so I went with duck. I did lots of research on cooking temps, doneness, time so I can plan out when it would be done.
I picked up the duck at Central Market.. kinda like whole foods but they don't bend you over as...
I have to agree with GMC, lump seems to run hot, and in my experience the variability of the sizes makes it hard to get a consistent path. I'll be happy to hear someones actual experience though.
