    Well...what do you know, I made it!

    This post is a milestone post for me...Post # 1000. I made it to 4 digits. Smoked a bunch, helped others a bunch, Won a fattie throwdown, built a smoker (or three), cussed and discussed everything from Charcoal to spray bottles. It has been quite a ride.

    If it were me, I wouldn't bother removing the bark unless it were diseased or moldy or had some other funk on it. Also, I say go ahead and chip it green. The increase in surface area will assist in speeding the process for seasoning.

    I agree...I can look past a rustic bldg, and a lot of times that adds to the ambiance and mystique of a restaurant, but I cannot look past filth or unsanitary conditions. That is a total deal breaker for me.
