Choice rib roasts are on sale near me right now for 7.99 a lb and I really want to try and dry age one for Christmas but I don't have a dedicated fridge for this sort of thing just one in the kitchen so I'm sort of leary!
So you want to build it as a reverse flow? You will have to use the firebox calculator to determine proper size so it will work correctly with your setup and make sure the stack is proper size and length for proper draft.

Yeah tv prices have dropped way down! If you invest in a new one make sure to look at the specs and get a led lcd display with at least 120 or 240 hz refresh rate it will have a much better picture. I'm gonna pick up a new one on black friday
I have a big coleman cooler that I got at a yard sale for 2 bucks that will hold ice for a couple days and I also use it to rest meat in but after about 7 years I think it's time to get a new one but I'll just get another coleman.

I don't inject or wrap any more. I just hit mine with mustard and rub and let sit for an hour or so in the fridge and smoke with hickory at 275 and it comes out great.
