    Brisket

    I smoked up a 5 lb piece of brisket for 7 1/2 hours at 250F using hickory. I wrapped for last 1 1/2 hours. First time doing that and made a difference to final product. I think by wrapping it ended up smokier taste which is a good thing. Served up on toasted cheese buns.

    Smoked up a rack of Country style ribs which for some reason are called Texas roast in this part of Canada. Put them in the MES for 4 hrs at 240F.     Smoked 1/4 chickens in my MES for hours at 240F. I had put baking powder on the skin as well as the rub. The skin was a little crispier but not what wanted. Any one got suggestions. Chicken tasted GOOOOOD and made mac'n'cheese as a side.
