    Sauce Suggestions for Brisket?

    My 1st brisket will come off the smoker at 4 bells and will rest in the cooler 'til 6 bells. Please give me any suggestions for a finishing sauce or dipping sauce, etc... I'm not sure how I'm going to serve this to my guests after I slice it down.

    Add a couple of thermometers to the side of the unit and you'll never look at that inaccurate door thermomoter again. Instead you'll know the temps between the top 2 racks and the bottom 2 racks...ya know, the temperature where the the meat actually is! Good Luck!

    I've got a thick aluminum baking pan with nice high walls that I'd like to use to replace the small smoke box on my GOSM. Any concerns with aluminum? Can it stand the heat or is this a bad idea? Forgive me, I flunked Metalurgy!
