...more importantly repeatable. I have another rack in the fridge for the coming weekend!
As an FYI the same, rib provider cures and smokes their spares as well.....OH my they are soooooo good, I will do a post on them as well in the near future!. It's like the Disneyturkeylegs but only...
So we had some turkey drumsticks in the freezer that was past time for doing something with.
Decided to cure them using Pop's brine... into the cure. Put them into the bath on Sunday and removed on Thursday. Then dried and put on a rack in fridge till Friday
These things were huge...
Agree, those looks great but with @jcam222 smoked turkeylegs should be cured. Pops low salt is PERFECT for that and a great way to get into learning it.
I used to use Pop’s brine to make smoked Disney style turkeylegs. I love how they came out. I would brine/cure them for 3 days. My question is…what else can this brine/cure be used for? How would it do on chicken or even pork chops? And if it works for these meats as well, how long would be a...
These Big Legs were made for Walking , " DISNEYTURKEYLEGS "
I have been looking and very hard to find around here this size Turkey Drums. But my SIL found some and gave me 2 ( well traded me for a 2 1/2 pound pork roast I had in the freezer ) I think I got the better deal as these legs were 2...
Thanks John for the like and the comment
I love dark meat turkey, and white if it is not dry. These legs are more of a treat to have.
I know that Disney only has the drums at 1 or maybe 2 places now, not in Frontier Land like they used to I think, have not been for a few years.
Plant based...
I did these a couple years ago for Christmas and people just loved them. Any that were left after dinner were quickly snapped up in doggie bags as people left. Decided I would do a case to pass out to friends and family for Thanksgiving this year. The salty sweetness of these is a nice change...
Hi there and welcome!
You can buy a whole turkey and basically cut off the bottom quaterters and wings. That's what the frozen bone in breast is at the store. You can buy that bone in breast version too and save the time of having to cut a bird in half and remove the wings.
If you are going...
If you're trying to make them Disney style, go with turkeylegs.
And go the extra mile by removing the tendons.
Here's an old thread on that:

Thanks Jeff for the comment
They taste great , I always love the turkeylegs ( when we went to Disney )
so I wanted to try the chicken as I had a few packs. I have a cook coming up maybe Sunday
that I need the chicken for.

Yes this market puts on some really good prices , mostly chicken .. I picked up a lot of chicken legs the other day cheaper than wings. Going to do them like Disneyturkeylegs in a couple days I hope.

Been a while since I posted anything on this forum, good to be back.
Did my usual thing on Tday morn, smoked the legs and a couple wings to nibble on before the main event, even threw on some pork belly bites.
I make a Disney type brine for the turkey the night before and brine for 12 hours. I...
Trying some chicken thighs and drumsticks today. Made a brine of 12 cups water, ½ cup kosher salt and one cup brown sugar with a couple teaspoons of garlic powder, a sprinkling of thyme and rosemary and a dash of apple cider vinegar. Soaked the meat in it for about 12 hours. The meat is in the...
Looks tasty to me!! You want to really love turkey drums do some cured Disneylegs. I make them around the holidays and people inhale them and want leftovers to take home.
Hi there and welcome!
Great first smoke.
Biggest poultry tips to help you out are:
1. Smoke your poultry at 325F smoker temp to get edible skin. Poultry skin just doesn't want to be edible unless cooked at a higher heat. Think of this is a quirk of skin on poultry (chicken or turkey)
2. If...
I got tired of trying to find turkeylegs so I made Disney style (cured) chicken legs. They came out great with a wonderful taste. Matter of fact, from now on, I will do these instead of turkeylegs, they are easier to eat.
4 lbs of legs
4 Cups water
1 bay leaf
1.5 teaspoon of kosher salt
¼ Cup...
Do you guys figure 24 hours is enough time in the brine? I have 4 legs averaging around 2lbs each. They were sitting in a wet curing brine for about 24 hours, give or take an hour. I pulled them and gave them a wash because I was afraid them getting too salty. Do you guys figure this was a...
