    Built a DIY PID with an Inkbird ITC-106vh controller. Wondering if anybody has used this on a Masterbuilt 40. I run a AMNPS tray in a mailbox mod . Looking for the PID settings that worked for you. TIA

    Butt in a new to me MES 30 Pro

    ...I bought a couple years ago, cut some csr's off of and stuck in the freezer. Pulled and ready to eat. Added a bit of Jeff's rub to it. Only note is that it's a little light on smoke flavor.     I've only ever cold smoked them... Hard to do in a mes unless you have a tube for pellets or an amnps for pellets or dust. Any container will work... I've used coffee filters before Ryan

    Weather good for some smoked cheese, so why not. Got some Monterey Jack, Mozzarella, gouda, Gruyere, and Brie. Into the mes with 2 rows of hickory pellets in the amnps and mailbox. Smoked 3 1/2 hours. Now if I can wait to try it. Probably not. Thanks for looking.

    Lumberjack Pellets

    Currently, using the pellets in my Green Mountain, although, I do use the AMNPS in my Masterbuilt and the clumps should be no problem for that. I've heard/read a lot of folks use Lumberjack and maybe the bag I got had gotten had some moisture in it. Thanks for the quick reply!

    Mine doesnt require much baby sitting runs pretty close to set temp. Using the mailbox mod with the amnps tray I get 9-10 hours of continuous smoke, also another reason you'll need the pellet tray most mes smokers would burn chips under 200-210.
