Yup only two of us here so we vac seal a fair portion of left overs. Vac them in 1.5 lb serving chunks. Thaw when its time to make chili, dice and add it to the batch. Love smoked brisket chili, it's one of our favorite meals.

Has anyone done an over night hold on spare ribs. Like 12+ hours? I am cooking brisket and pork butt on Friday for a cookout Saturday. I was thinking I might cook the spares then too.

96% ground Kroger beef is on sale at $9.99 right now. Insanity. I havent been to Costco in a couple weeks to scope the brisket price. Last one I bought was $6 and change per pound.
In Franklin's book he talks of his favorite being beef ribs with Franks hot sauce and he is not kidding! Works equally well on brisket. I'd get a bottle of Blues Hog and a bottle of Franks.
