Even cooking on hanging sausage in MES

Hey guys. I have a MES 30 cabinet that I modified with an Inkbird PID and different burner and use the mailbox mod for smoke. The only issue I am having is the when hanging summer sausage or snack sticks the bottom (closer to burner) is cooking faster than the top. I tried a fan to even out...

...I used a pellet tray when I had mine for a little extra smoke but not necessary. When I used it I would keep the chip loader halfway out for good airflow for it. You’ll be happy with it. Look into the mailbox mod if you’re interested. I never did it when I had mine but it seems to be very...

MES Rewire Simple Guide - No Back Removal Needed!!!

@KonaRich the only thing you'll accomplish using a PID this way is turning your MES off after the temp set on the PID is reached. It would be no different than simply unplugging your smoker and then plugging it back in. Then you'll need to turn the MES back on at the control panel, reset the...

Great info here. I still have one but don't use it. I would add use another termo in it to get the right temp. I used a sawdust tray in mine. I had to repair the wiring in mine and replace the heating element

MES Rewire Simple Guide - No Back Removal Needed!!!

Hi there and welcome. Yeah @normanaj is completely correct! The PID would be cutting power Off to the entire MES. That means no power to the controller and heating element so it is effectively unplugging the MES. Then when it turns power back on, I believe the MES is no longer set to be "on"...

    Wood Chunks Not Consistently Smouldering?

Mailbox mod would be a nice addition but a little more work than a digital masterbuilt (MES) as the MES already has the hole thanks to the chip loader.Or a Bella style smoke generator might be the better option.

What is the best pellet grill for smoking salmon?

...going to have issues finding a pellet smoker that can go low enough. I have a traeger and the lowest setting is 180f, with a +/-20f temp swing on either side. I'd second the vertical electric smokers since you have the ability to run them a much lower temps. Add a mailbox mod you can cold...

    Windy Day MES 140 Smoking

...wind since it’s sealed pretty well I wouldn’t imagine you will either. If you go the route of a pellet tube or tray I would use the chip loader halfway out for better air flow for it assuming since your in an apartment and probably not much room on the balcony the mailbox mod isn’t very...

    Bacon Pellicule Dillema

...will go is 180 degrees. I've smoked this way in the past with my GMG, keeping the door lid cracked with a block of wood, but it would go down to 170. This is when I miss my MES-40 and mailbox mod. I may have to stop when the bacon IT hits 120, then smoke again in a couple hours after it cools...

...but at higher heat, around 1.5 hours should be enough. Work with what you have, you can make it work, but this is why many of us use alternative ways to make smoke. Like the mailbox mod, or a stand alone smoke generator. This way you can control heat and the smoke independently. Path to...

    Windy Day MES 140 Smoking

I sort of thought that about the MES not really smoking people out of anything, wasn't 100% sure though. I was thinking about making an exhaust tube to direct the smoke away, but the bottom of the patio above me is 13 feet up so I figured that'd be enough for the near constant wind to be able...

    Modified MES 30 test run

Well I finally have my MES 30 a test run. My mailbox mod ran well. Didn’t seem to add heat and the smoke is steady. Added a side shelf to hold the pid. The only issue I’m having is temp overshoot. I do have an aftermarket element. Probably too big. Does everyone using a MES 30 use the supplied...

    2nd round bacon question.

Unfortunately, cold smoking involves a bit more equipment, but you introduce smoke to the bacon with no heat. It imparts smoke but doesn't cook it. Look up mailbox mod on this site . Or cold smoke adapter. I use an old Bradley with a cold smoke adapter. Corey

I don't get the hate on Pellet Smokers.

I will happily buy another pellet smoker once I get re-established. So good for overnight cooks. I also had a MES40 with a mailbox mod that I liked, but occasionally the AMPS would go out prematurely during the cook. Not a problem with a pellet smoker with a large hopper, and a remote thermometer.
