A Lang is a reverse flow smoker, so the stack & the firebox are on the same end. The water pan is up against the firebox end & that evened out the side to side temps. Extending the stack into the cooking chamber evened out the temps between the top & bottom racks. Hope this helps.

Welcome to the forum.
There are a lot of guys on here with your smoker, & there are a lot of mods that can be done to them to get better temp control. Here is what a quick search brought up.

Well they are different style smokers, The OKJoe is a reverse flow offset, where as the WSM is a vertical and they operate different mostly with how the heat is directed. I had a Vertical propane smoker the same one as in Jeff's book. I hated it. It seemed to dry stuff out reguardless of...
After all the crazy hours I've worked, weather permitting I'm finally going to season my smoker ( OKJOE Highland ) tomorrow
I have several cans of Pam for the inside & WD40 for the outside
I have charcoal & several logs of oak, if there's anything you can think of let me know I'll check this...
So, I mentioned elsewhere I just got a new OKJoe Longhorn Combo...the one with the offset firebox/smoker alongside a propane grill.
Got good info on seasoning, and I have to even assemble the thing yet, but that's where I got to thinking (dangerous, I know)...
I'm reading a bit here and...
Good morning!
I've been lurking for awhile and have been smoking for several years using a cheap brinkman charcoal smoker. My wife got me an OKJoe Highland last month and I've used it a couple times to great success. I did the basic seal on the door and rtv on firebox seams but otherwise have...
For someone getting away from an electric smoker and making his first attempt at wood smoking, would an OKJoe Highland be a great start? I've been doing a bunch of research on here and seeing the opinions. Of course I would go with a much higher end smoker, but want to get that learning curve...
I've been eyeing the okjoe offset cookers for a while and I picked up one yesterday on clearance. These things are heavy duty and with the right mods and care it should last for a long time. I sealed the two pieces of the fire box together and then sealed it to the CC. If this sealer breaks...
Watching this one...just setup the same rig (OKJoe 3-in-1) yesterday, seasoned it, and did some burgers and dogs on it.
I'm thinking I'm gonna break it in as a smoker with a batch of PA Dutch Sweet Bologna. I've made that in my MES before, so I want to run something I've made before so I'm...
Just wanted to say Hi
I just got an early fathers day gift from my family, a new OKJoe Highland, seems like that is the gift of choice lately, Its not even out of the box yet. Hopefully this weekend I'll be building & seasoning it, I already picked up a lot of mods for it, figure I'll build it...
Was shopping at Walmart today and noticed the OKJoe Highlands were on sale. I'm in the process of building a 250 gallon propane tank RF smoker but wanted to start smoking some meat while that's in the works. I know most people modify these to be more efficient so that'll be the next step! I...
I'm very new to smoking meats and such and financial constraints limited what I could spend on a new, serious smoker. With some help from here and some time spent on study of Youtube videos I've made what I hope are helpful modifications to my wonderful affordable OKJoe Highland smoker...
It's a little more than you'd like to spend, but I have an OKJoe Longhorn Combo. Which has a smaller cook chamber for smoking, but also has a propane side for any quick grilling or finishing off ribs and things like that. I haven't done any mods or sealed anything and it smokes like a champ! I...
Hi. This is Don. The thread mentioned shows some mods I made to my OKJoe Highland. Today I'm smoking my first brisket. I learned just this morning that the upper vent I added has a bonus feature I didn't expect. I can add short splits to the fire basket right through the vent without opening...
In my inexperienced but enthusiastic opinion, the offset smoker, if crafted of 1/4 inch steel, would be a fantastic base for some mods as I did on my OKJoe Highland. The bracing comment seems spot on to me, and a shelf would be a plus. An additional FB air intake would be fairly simple to fab...
I agree. I guess though some manufacturers target consumer is not a dedicated smoker but rather an occasional smoker who wants to try their hand. I was "that guy" 20 years ago with my first offset smoker (now it's a shortened modified patio burn thing for logs that I can safely shut the lid on...
So I have the Oklahoma Joe, Here in Auckand new zealand these are $1000-1400 - you lucky walmart shoppers. Anyways i have done the tuning plate mod, used gasket goo and sealed the firebox and used lavalock tape around the door and firebox and also fitted the lavalock Latches . All standard...
I would think so. I believe Horizon metal is 1/4" and the OKJoe is thinner. The OKJoe will be new, but you will have to put in another $200 or so in mods to make it a much better smoker. The rust.....just wire brush it and repaint with a high temp paint. If you can, go look at the Horizon and...
