Looking for a new smoker for sausage

I watched craigslist and Marketplace for weeks and I got lucky with a Smokintex 1460 . Very similar to TSM and Smokit . Bought a PID controller and I am very happy.

    My venison summer sausage dilemma

I went through this very same problem using a SmokinTex smoker. Analog smokers have a rather large temperature swing as I found out with the Fat Out .. I spoke with the factory reps and they were stubborn and defended their product and tried to make me think the 30 degree temperature swing was...

Help needed Summer sausage using SmokinTex 1400 with Auber AW-WST1510H-W

...not often. I do have a love for smoked fish, summer sausage, as well as sausage links. For this reason alone, I went ahead and purchased a SmokinTex 1400 analog electric smoker. I had never heard of SmokinTex or recall ever seeing an all stainless steel smoker. I did not doubt that they...

    Need a new smoker

I have a Cookshack SM009 electric that was built in 2005, and a 2011 SmokinTex 1400 and both are still working just fine. I would look for a used Cookshack, SmokinTex, or Smokin-It on Craigslist or Facebook market place to get the most for your budget.

    Another Marathon Bologna run

Yeah I have had the same size batch finish in 9 hours with a steady rise to the finish and some that take much longer ! I am using a SmokinTex 1460 which is just like the Smokit and Cookshack smokers and I added the Auber PID for consistent temps . And I learned early about opening the smoker. I...

Have any tips for 1st time salmon smoker?

...med-rare) Once you go over 145 it gets dry and tough. For hot smokes, I have never had fish smell remain.... When I cold smoke fish in my SmokinTex I have that issue, to combat that issue, once I pull the fish I o do a burn out where I load it up with wood and run it at 300 for 2 hours. Jason

    Using Chunks?

You should investigate further. When purchasing a new SmokinTex, they include chunks to season the smoker with. Plus, SmokinTex sells wood chunks on their site. If their smokers weren't designed to use chunks, then they would make that well known. Brand spanking new Model 1400 for $649...

    Using Chunks?

True. However, both the Smokin_It and SmokinTex smokers are designed to use chunks. I think some sellers were just pulling the OP's leg. In my electric, chunks are definitely a no-go. I tried it, so the manual was correct.

    ELDONS PEPPER STICKS

Okay I have 10 hours of smoking and the IT was at 151 3 hours ago but now it's at 148 ? I layered the rolls of snack sticks on the racks inside my Smokintex 1460. This temp going backwards has me thinking ! Why would it take so long to cook such a small stick ?

Help needed Summer sausage using SmokinTex 1400 with Auber AW-WST1510H-W

Try this link: https://www.smokingmeatforums.com/search/5869470/?q=smokintex&o=relevance As for simulating a load, throw-away aluminum pans no taller than the thickness of the sausage filled with damp sand. This gives you mass and moisture simulating meat. If simulating a butt or brisket, then...

    Using Chunks?

Oh, sorry.... when I said 'they' sell chunks I didn't mean the smoker manufacturer, I just meant 'the folks' selling flavor wood sell chunks that are convenient for them. I like flavor wood that's convenient for me. All that said, sometimes the chunks I buy are perfect, or maybe they need to be...

Help needed Summer sausage using SmokinTex 1400 with Auber AW-WST1510H-W

thank you. that is the most precise answer that I have gotten so far. My autotune numbers have been so far off from one attempt to the next that it is not funny. P ranged 53-80, I ranged 450-1608, D from 112-204.

    Need a new smoker

The best advice I can give regarding electric smokers is to do your homework. Cookshack, Smokin-it, SmokinTex, PK 100, Masterbuilt, Old Smokey, and the list goes on. Some analog, some digital, some PID, some with wifi, etc. It all comes down to budget and desirable features. User comments...

...of time in this. With so many variables, I have not been lucky enough to find anyone with my particular controller and similar smoker be it SmokinTex, Smokin-it, cookshack. The older model Aubers have totally different programming style. I would like to think the PID values should be the same...

...much difference. When one of the chubs gets to your IT the others should be close or maybe a tad higher. As long as they are the same size! I have the SmokinTex 1460 and I didn't like the temperature swings so I purchased an Auber PID and now I have precise temps so I set it and forget it. Also Y

    Struggling with Brisket

Hello fellow smokers! I am new here and notice there is a lot of support. I am in the process of opening up a food truck and bought a Smokintex 1460 as space is limited. I am used to smoking in a massive Southern Pride smoker and I am struggling getting a hang of the Smokintex. I smoked a 10lb...

Looking for electric smoker. Is Bradley a good choice?

...Analog controller version has full 3 year warranty; digital versions are 3 years on the smoker and 1 year on the controller. Other all stainless options are CookShack and SmokinTex. Check the warranties. Lots of folks here have Masterbuilt so you would be in good company if you go that route.

    ELDONS PEPPER STICKS

Evaporative cooling effect...as moisture diffuses from inside the sausage to the surface, it needs to absorb heat to go from liquid to vapor. the molecules pull heat from the surface of the sticks....the same way sweat cools your body. close the top vent back 80-90%...this will increase the...
