    a longer brine anyone?

    I do 2 to 3 days using pops low salt curing brine and take dark meat to around 190. Super juicy and tender. Dont do white meat very often though.

    I'm a gravy guy myself. I pour the drippings off before resting and make a spicy gravy from them. This where I got my recipe from but it calls for way to much cayenne. I dilute dripping with water, usually half and half. If dont make gravy save juices and freeze for next time. gravy

    I added butter, salt and Splenda Brown sugar. Sous vide at 183 for one hour than dumped in pan. Fried until sauce thickened. I might go longer next time but man these where good.

    Picked this up at HEB a while back. Sous vide some glazed carrots a friend gave me. Grilled it on the Kettle with vents half open to 145 than finished with quick sear. Was pretty good. Carrots and veggies where really good.
