Thinking about this WSM. Positives/Negatives ?

Its been said around here before that the WSM has is like the best all-around smoker. I made my own Mini WSM from a Smokey Joe and a steamer pot. There is a lot of useful information on them and ideas at TVWB

    Camping pork loin

...thinking. LOL. Anyway I decided to do two hunks of pork loin. The pork seasoned with @smokin peachey rub. Its good stuff. Cooked on my mini wsm with hickory. Temp started at 210 for a hour or so then rose to 230. At hour 3 or so I glazed with a sauce my wife buys. Its pretty good...

    New to smoking-need suggestions

...it’s an early first gen... I cook for 2 people... It was cheap and I was a newbie.. I have an extra element and extra control panel... control panels are 29.99 from Masterbuilt... If I was just starting out now, I would by the MES 40 2.5.... Then have a WSM or mini WSM with IQ 130 on the side...

    Overnight PP

...at -25°F, but once all that ceramic mass heats up, the Eggs run just like they would on July 4th. I get better flavor from my drums or my Mini WSM, so I treat them as a 3 season cooker. At 3 am, your oven is a good option to straighten a cook out. We've all done it. On the bright side...

    New smoker on the way!

I have the Party-Q for the Mini WSM and I love it a lot! But if it were me, I'd hold off until you got a feel for how stable the WSM22 is without it. But then again... if your lust for gadgets get the best of you, who am I to rain on your great idea?

    Schwenk and Disco!

Woah! hold on there Skippy, you are going to need something to catch the grease or you will have a black bird. Try a pizza pan with holes inside a pizza pan without holes.

    DigiQ or Pitmaster IQ

That's funny right there! I use a Guru Party-Q on my Mini WSM often, and it would also serve well on a Kettle 22. Really it comes down to matching the size of fan output CFM to the size of the smoker. D/C vs A/C was the determining factor for me to be portable. Batteries life has been great...

    Lamb ribs and chicken thighs

Went to Wally World the other day and saw what appeared to be little tiny baby back ribs. Upon closer inspection, the package was called "Lamb Breast". I'd had this before, but without the ribs attached. I figured it'd be a good candidate for a dip in the sous vide jacuzzi. Started off at...

    Schwenk and Disco!

I could put the Shwenk grate on and cook a bird! Invert a mini-wsm pot over it and good to go! We are traveling this year. Have a bone in breast going on tonight for us to take to our remote destination!

I Made a "daveomak" Ham Using a Picnic Shoulder, a Loin, & a Boneless Butt.

...had a reference for slicing to show all the muscle groups.... like a pork steak is sliced. This is after a few hours of cold smoking in my Mini WSM After 11 or 12 hours of cold smoke, I moved the ham into my Big Chief starting off at 120° and ramping up to 160° over a 5 or 6 hour period...

    Two Questions for Cheese Smokers

...but that's no problem when cold smoking. In fact it might improve draft. The wind on the other hand..... Anyways, good idea! I have some of these half round skewers (which are very stable), and this grill in the photo is the same diameter as my Mini WSM, so I'll give your idea a try. Thanks.

    Home made Vortex.

I concur. The opening at the top needs to be approx 1/2 the size as the opening in the bottom. Here's mine that I built for the mini-wsm. Its approx 4" opening and 8" opening.

    Overnight PP

It was super moist and not dried out at all. Most of the outside facing meat was very mushy though. It had basically decenagrated when I tried to remove it from the foil. Flavor was great though and the family loved it. Had only about 5 pounds left over which I I vacuum sealed into 1 pound...
