    Charcoal basket in an offset

Thanks. That's my current method. Mine runs well with the door left open about an inch. I'm hoping to get stable temps without feeding it as often.

    Charcoal basket in an offset

I chucked (quit using) the basket on my OK Joe highland after I read a tip on how to slant stack a grate in the firebox and get th fire started with a chimney of lump or briquettes. Then added mini splits through the door of the firebox on top of the glowing embers. Worked quite well and made...

    Enough with the Gas Grill

I knew there had to be someone in the area! I'm leaning toward the WSM 18 - even though I generally just cook for my wife and I (and share the extra with my daughter or a good neighbor) I don't hear much about the Mini. If I decide to go in that direction I may get back with you.

    WSM 10

I love my mini wsm as well. Probably my favorite smoker in the garage. So easy to use and puts out some impressive food for such a small cooker.

Thanks. It went together pretty easy. Not as easy as a real mini wsm, but close. Happy belated birthday btw 🎁

    OFG Trail Bologna

I know this response is to an old post, but I just want to thank you for the recipe. The first time we were in Ohio Amish country (Holmes County) I was introduced to Trail Bologna. Love the stuff. We always loaded up when in Ohio in our RV. It's not available outside Ohio, and store- bought...

    WSM 10

After the grates and everything else, it probably cost me around 80 bucks total, or close to it. I just enjoy making things and figuring out how to make them work. Nice score on the WSM 14. I've been wanting one for a while, just haven't pulled the trigger

Masterbuilt Slow & Cold Smoke Generator Question

That's correct . I've thought about it for years now . Then I thought about making a insert with a tap on it for my 14" WSM to use in place of the side door . Still might do that someday , but I've since started burning wood chunks for higher temp cooks . I have a pastrami in mine now . Set to...

Pork Loin Rib roast and beans , plus my thoughts on 14" WSM and ThermoWorks Signals and Thermapen ( Long and pics )

...meal.. well done ... As for a second WSM... They are very easy to make with the weber Smokey Joe kettle... I have two of them... What's really nice about them is you can still use the Smokey Joe as a grill when needed to do steaks or burgers or whatever... Just search for Mini WSM's builds ...

In 2023, what's the pot of choice for a Smokey Joe Mini-WSM?

I'm thinking of making a mini-WSM setup to occasional use for my wife and I, mostly on camping trips. I have an older 14" Smokey Joe. As the title says: In 2023, what's the pot of choice for a Smokey Joe Mini-WSM? And are there any pitfalls or issues to be aware of in pot selection? Thanks

WSM and Wood Chunk Quantities + Stick Burn Trial!

Notes so far: Dealing with "firebox" is an every ten minute thing. Either to move coals, reposition things, reignite to get a flame, etc. You always want to see fire. Always. I've done enough research on this to know what I should look out for. For this trial, I am keeping the ambient temp at...
